Cajun Soup and Salad

Soup and Salad is a simple and comforting menu lunch.
 This spicy version gives a new twist to this classic favorite.

Crab meat and corn soup

Thin White Sauce

1-2 tablespoons of butter

1 tablespoon flour

¼ teaspoon salt

1 cup milk

¼ oz dried shiitake mushrooms (equivalent to approximately 4 ounces fresh mushrooms sauteed)

Melt the butter over medium heat in a medium saucepan. stir
flour and salt and beat until smooth. Add the milk and reduce heat to low,
whisking constantly.
 Cook just below the boiling point until sauce
reaches the desired consistency. Add the dried mushrooms and stir well.

¼ pound butter

1 can condensed milk

1 st. A half

Two cups of corn grain

½ pound of crabmeat

¼ cup chopped green onions

Melt the butter in a large saucepan, add the remaining ingredients and white sauce and simmer for 20 minutes.

Cajun Tomato Salad

Juice of 1 lemon

1.8 oz container of plain yogurt

2 cloves garlic, minced

½ teaspoon thyme

Cayenne pepper, 1/8

½ cup chopped green onions

½ cup chopped celery

½ cup chopped green pepper

3 cups tomatoes, seeded and diced

Salt to taste

Pepper to taste

Mix first five ingredients then add the remaining ingredients and salt and pepper to taste. Cool and serve.
